Colombe’s entry into the restaurant industry came while deciding on a major in university – she took a job as a dishwasher in a bistro. Her next step was much more remarkable, though: she became a wine bar’s head chef at 19 years old.

The hometown chef

Colombe Saint-Pierre turned her quaint Northern Quebec hometown into a global destination for innovative local cuisine, transforming simple, locally sourced ingredients into sophisticated dishes. A champion of sustainable regional food – she’s been dubbed “La reine des régions” (Queen of the Regions) – Colombe fills her seasonal menus with fresh fiddleheads, green juniper, wild pepper and more specialities that prioritize market gardening and local livestock. Colombe’s love of food sent her on an eight-year quest travelling the world in search of new flavours, getting to know different culinary traditions before she returned to her own roots in Quebec. There she established her cottage-like restaurant Chez St-Pierre in the quaint village of Le Bic, north of Quebec City. The restaurant celebrates the region’s culinary culture, history and environmental beauty from season to season, offering creatively prepared organic meat and seafood, locally grown fruit and vegetables, and an array of foraged plants.
